Rocky Mtn Rush Lemon-Rosemary Grilled Chicken

Type: Main Dish (Chicken)
Use of Rocky Mtn Rush: Used in the marinade and as a topping.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp Rocky Mtn Rush seasoning mix
  • 1 tbsp fresh lemon juice
  • 1 tsp dried rosemary (or 1 tbsp fresh rosemary)
  • 1/2 tsp salt (optional, depending on your preference)
  • 1/2 tsp black pepper
  • Fresh lemon wedges (for garnish)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. In a small bowl, combine olive oil, Rocky Mtn Rush seasoning, lemon juice, rosemary, salt, and black pepper.
  2. Rub the marinade over the chicken breasts and let them marinate in the refrigerator for at least 30 minutes (or up to 2 hours).
  3. Preheat your grill or grill pan to medium-high heat.
  4. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F.
  5. Once grilled, sprinkle an additional layer of Rocky Mtn Rush on top for added flavor.
  6. Garnish with fresh lemon wedges and parsley before serving. Serve with roasted veggies or a salad.
