Furious Fajita Beef Tacos

Type: Main Dish (Beef)
Use of Furious Fajita: Seasoning for beef marinade and as a topping.

Ingredients:

  • 1 lb flank steak (or skirt steak)
  • 2 tbsp olive oil
  • 2 tbsp Furious Fajita seasoning mix
  • 1 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt to taste
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled queso fresco (optional)

Instructions:

  1. In a bowl, combine the olive oil, Furious Fajita seasoning mix, lime juice, cumin, chili powder, and salt.
  2. Rub the marinade evenly over the flank steak and let it sit for at least 30 minutes (or up to 2 hours) in the refrigerator.
  3. Heat a grill or skillet over medium-high heat. Grill the steak for 3-4 minutes per side, or until it reaches your desired level of doneness.
  4. Once cooked, let the steak rest for 5 minutes, then thinly slice it against the grain.
  5. Warm the tortillas on a dry skillet or grill.
  6. Assemble the tacos by layering the beef slices in the tortillas and topping with shredded lettuce, diced tomatoes, cilantro, and a sprinkle of Furious Fajita seasoning for an extra punch.
  7. Optionally, sprinkle with crumbled queso fresco for a creamy contrast.
